Cauliflower Breadsticks




1 large head of cauliflower

~ cut it up, cook it well enough in the microwave to chop up in the food processor.
Add 1 heaping tablespoon of minced garlic (in the jars in produce section)
1 heaping tablespoon of Italian Seasonings
2 eggs
8 oz. shredded mozzarella cheese
Salt and Pepper

Mix all together very well. Spray a cookie sheet with non-stick spray. Spread mixture evenly. Bake at 450 degree until edges brown (about 20 minutes). Add more cheese on top, bake until bubbly and browned to your liking. Cool for 5 minutes and cut with pizza cutter. Dip in marinara sauce of choice! 
(Do not cook on foil. You need to let the pan itself give this a nice crisp bottom. I found this out the hard way. It stick to foil, even if you spray it.)

Chicken Crescent Rolls


2 cans of low fat refrigerator crescents


1 can of healthy low sodium cream of chicken soup(26oz)
1 cup fat free cheddar cheese
2 boneless skinless chicken breast

I boil my chicken breast then shred, roll out each individual crescent, place about a Tbsp of shredded chicken in center and roll it up.


Bake on 350 for about 5 minutes until just starting to turn golden. Pour Cream of chicken over the top bake an additional 10 min top with cheddar cheese and bake for 10 more minutes.

OMLET BISCUITS



2 C. self rising flour

3 T. margarine or butter
1/2 to 3/4 C milk
1/2 C. chopped canadian bacon or ham
1/3 C. shredded sharp cheddar cheese
1 egg, scrambled
:
Place the flour into a mixing bowl, add the margarine and using a pastry blender or fork cut the margarine into the flour. Once combined, add in the canadian bacon, cheese and scrambled egg. Slowly add in the milk, a little at a time, mixing with a fork. Once the dough forms (do not get it too wet so it is not sticky), flour your hands and knead the dough just a little, not to over work. With floured hands pinch off some of the dough and gently roll between your hands. Place on a lightly sprayed (I use cooking spray) baking sheet and lightly press down. Repeat with remaining dough. Bake in a 425 degree oven for 12-14 minutes or until tops begin to lightly brown. Brush with a little melted margarine if you desire.

Sopapilla Cheesecake



2 cans Pillsbury Crescent rolls
2-8oz Cream Cheese (room temperature)
1 1/2 cups Sugar
1 tsp. Vanilla extract
1 tsp Cinnamon
1 stick butter (1/2 cup real butter not margarine)
Spray a 9 x 13 pan with cooking spray. Unroll and press 1 can crescent rolls into the bottom of your baking dish press the seams together. In a separate bowl blend the cream cheese, 1 cup sugar and 1 tsp vanilla spread over top of dough. Unroll the second can of crescent rolls and place on top of the cream cheese mixture pressing seams together again. Melt butter and pour over top layer of crescents. Mix the reaming 1/2 cup of sugar & cinnamon together. Sprinkle cinnamon sugar mixture generously over the top. If you don’t think that’s enough cinnamon sugar on top add more its really up to you there’s no rules on this part of the recipe. Bake at 350 degrees for 30 minutes until bubbly and bottom crust is slightly brown. Cool, slice and enjoy

Marshmallow Caramel Popcorn


• 1/2 c. brown sugar

• 1/2 c. butter
• 9-10 marshmallows
• 12 c. popcorn
• Microwave brown sugar and butter for 2 minutes, add marshmallows & microwave until melted.
• Pour over popcorn.

Best Southern pie ever


ingredients


1/2 C. buttermilk
1 3/4 C. sugar
2 large eggs
3 T. flour
pinch of salt
1 stick butter or margarine melted
1 t. vanilla
nutmeg

Directions
Preheat oven to 400 degrees F.

Mix everything together and pour into an unbaked 9" pie shell. Sprinkle the top lightly with fresh nutmeg. Bake 15 minutes at 400 degrees. Reduce to 350 degrees and bake about 45 minutes longer.
Cool to allow the filling to set.

This pie is rich, you could use a little less sugar and add 1 T. more flour.
NOTE: This is the way the recipe is written. I have sometimes reduced the sugar by 2 T. and increased the flour.

How to clean your cookie sheets


How to clean your cookie sheets--Kitchen "Miracle" Cleaner! You put about 1/4 cup of baking soda in a small glass bowl and squirt in hydrogen peroxide until it makes a nice paste. Then you rub it on the offending dirt/stain/grease...whatever! You can usually just use your fingers...but you can also use a small sponge as well.

WHITE CHOCOLATE REESES PEANUT BUTTER CUP FUDGE BITES



INGREDIENTS:


22 REESE'S Peanut Butter Cups
3 cups of white chocolate chips
1-14 oz can of sweetened condensed milk

Directions:
Line a 9x9 casserole dish with foil. Lightly spray it with cooking spray.

Arrange your Peanut Butter Cups on the bottom (16 total)

In a large sauce pan add your white chocolate chips & sweetened condensed milk and heat over medium low heat until all of the chocolate has melted.

Once everything is well combined immediately pour the chocolate/milk mixture over your peanut butter cups.

Chop the remaining 6 peanut butter cups into smaller pieces and spread evenly over the top of the mixture and press down slightly.

Let cool on the counter for a while and then cover with plastic and put in the fridge to cool completely. We've actually just stored our fudge in the fridge to keep it longer since it made so much!

Once it's cooled in the fridge for a couple of hours you can cut into bite sized pieces, or huge chunks... it's up to you.

Slow Cooker Bacon Cheese Potatoes


Ingredients:
1/4 pound bacon, diced – I bake it first in the oven so that it is “done” and browned then I dice it and place in the crock pot.
2 medium onions, thinly sliced
4 medium potatoes, thinly sliced (or if you use a new potato or Yukon gold then halve)
1/2 pound cheddar cheese, thinly sliced (shredded is fine)
salt and pepper
butter
Green Onions (optional)

Directions:
Line slow cooker with foil, leaving enough to cover the potatoes when finished – this will help to not stick and to steam the potatoes – also to keep them from getting discolored or mushy.
Layer half each of the bacon, onions and potatoes in the crockpot.
Season to taste with salt and pepper and dot with (real) butter.
Repeat layers of bacon, onions, potatoes and cheese. Dot with butter.
Cover with remaining foil.
Cover and cook on low for up to 6 hours (check at 4 hours – depending on your crock pot).
Add cheese for the last 20 – 30 minutes and enjoy!

Company Chicken Casserole


Ingredients
  • 4 boneless skinless chicken breasts
  • 1 cup chicken broth
  • 2 cloves garlic
  • 2 wedges of onion
  • 4 cups Pepperidge Farms Herb seasoned stuffing mix
  • 1 cube butter (1/2 cup)
  • 1 can Cream of Chicken soup
  • 1 pint sour cream
  • 8 oz frozen broccoli cuts – thawed (optional)
Instructions
  1. Place chicken breasts, broth, garlic and onion in a skillet and bring just to a boil over medium high heat, turn heat down to medium, cover and simmer until pink is gone – about 15-20 min.
  2. Remove the chicken and shred with a fork and set aside. Reserve the broth (this should equal about 1 cup, but if it doesn’t add enough canned broth to equal a cup).
  3. Melt the butter and pour over stuffing mix in a bowl and whisk with a fork to blend.
  4. Spread half of the stuffing/butter mixture in a large casserole dish or glass 9 x 13” pan.
  5. Blend the soup, sour cream and reserved broth together with a wire whisk.
  6. Place shredded chicken over the layer of stuffing mix. If using broccoli, spread this over the chicken.
  7. Pour the soup mixture over the chicken, then top with the remaining stuffing mixture.
  8. Bake for 30 min at 350°. Serve and enjoy!

Crockpot Chicken and Noodles



Ingredients

4 boneless skinless chicken breasts (I used frozen)
2 cans cream of chicken soup
1 stick of butter
2 15 oz cans chicken broth
24 oz. frozen egg noodles

Directions
Cook chicken, soup, butter, and broth in crock-pot on low for 6-7 hours.
Take chicken out and shred.
Put chicken back in; add noodles and cook on low for 2 hours. Stir a few times while cooking.

Brown your ground beef and drain completely - then add 

refried beans, taco seasoning and about half a can of 

tomato sauce. Mix together and scoop into taco shells, (stand them up in a casserole dish).







Sprinkle the cheese on top and bake at 375 for 10 minutes!!!!!!

Almond Joy Cookies


Ingredients:

1 cup butter
1 1/2 cups white sugar
1 1/2 cups brown sugar
4 eggs
3 teaspoons vanilla
4 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
5 cups chocolate chips
2 cups sweetened coconut
2 cups chopped almonds

Directions:

Pre-heat oven to 375°F Lightly grease cookie sheets.
Combine dry ingredients, set aside.
In a large bowl, cream the butter and sugars together. Beat in the eggs, one at a time, stir in the vanilla. Stir in the dry ingredients until well mixed then stir in the chocolate chips, coconut and almonds. Drop by rounded tablespoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes. Cool on baking sheet for 5 minu

Sweetie Pie’s Macaroni & Cheese



Ingredients:

1 pound elbow macaroni
1 cup whole milk
2 12-ounce cans evaporated milk
3 eggs
1 cup butter, cut into small pieces
½ pound Colby cheese, grated
½ pound Monterey Jack cheese, grated
½ pound sharp Cheddar cheese, grated
1 pound Velveeta cheese, cut into small chunks
½ cup sour cream
Salt, to taste
1 TB white pepper
1 TB sugar
1 cup grated mild Cheddar cheese for the topping

Instructions:
Heat oven to 350° F. Prepare a deep sided 9×13 pan by coating with cooking spray. Set aside.
Bring a large pot of water to a boil. Add salt, and cook elbow macaroni according to package directions until tender. Drain and transfer the macaroni noodles to the baking pan.
While the macaroni is cooking, combine the milks and eggs in a large bowl. Whisk until thoroughly combined. Add the butter, cheeses, sour cream, salt, pepper, and sugar and stir to combine. Pour over the macaroni and stir to combine. Top with the grated mild Cheddar cheese.
Bake for 30 to 45 minutes or until the top is lightly golden brown

No-Bake Chewy Granola Bars



2 cups quick cooking oats (or pulse whole oats in a food processor a bit)
1 C rice crispy cereal
1/4 C shredded coconut
1/4 C butter
1/4 C honey
1/2 C brown sugar
1/2 tsp salt
1/2 tsp vanilla

Mix -In variations listed below

1. In a large mixing bowl, mix together the oats, cereal and coconut. Set a small saucepan over medium high heat and melt the butter. Add the honey, brown sugar and salt. Stir together then leave it alone as it comes to a boil. Once the boil has reached all the way around the edges of the pan, begin timing. Allow this mixture to boil for 2 minutes and 15 seconds. During this time, you may need to turn the heat down a bit so it doesn't overflow, but be sure it keeps boiling.
2. Pour the mixture over the oats, using a rubber spatula to get all the sugar mixture out of the pan. Mix the ingredients together until the oats are completely coated. Add in your desired mix-in then press very firmly into a lightly greased 9x13" pan. If you like your bars thicker, you can use a smaller pan. If you do not press firmly enough, the bars will fall apart when you eat them. Place them in the fridge for 20 minutes then cut to size.

Chocolate Chip
Add 1/2 C of mini chocolate chips to the finished mixture before pressing into the pan, allowing it cool just a bit or you will end up with melted chips. Sprinkle on a few extra chips over the top after they are pressed into the pan.

White Chocolate Cranberry
Add 1/3 C of white chocolate chips and 1/3 C of Craisins to the finished mixture before pressing into the pan, allowing it to cool just a bit first or you will end up with melted chips.

Candy Bar
Add 1/3 C of Heath bar pieces, 1/3 C of mini M&M's and 1/3 C of chopped pretzels to the finished mixture before pressing into the pan.

Peanut Butter
Add 2 Tb of peanut butter to the finished sugar mixture before pouring it over the oats. Once mixed with the oats, add 1/2 C peanut butter chips before pressing into the pan.

Raisin Nut
Add 1/3 C of chopped raisins and 1/3 C of chopped pecans to the finished mixture before pressing into the pan.

Crock Pot Beef Tips


2 lb. stew meat, 1 can cream of mushroom, 1 packet brown 

gravy mix, 1 packet lipton dry onion soup mix, 1small can 

mushrooms, 1 cup water. Mix all ingredients and pour over 

the meat, set to low for the day,

chocolate twinkie cake

 1 box cake mix
1 can frosting

filling:

5 tablespoons flour
1 cup milk
1/4 tsp salt
1 teaspoon vanilla
1 cup granulated sugar
1/2 cup shortening
1/2 cup margarine
1/2 tsp salt

bake cake according to package directions. when cake is completely cooled, turn cake out of pan onto a large plate or platter. (i usually use a cutting board). if the cake is really moist, put the cake in the freezer for a couple minutes and it should pop right out!

cut the thickness of the cake in half with a large knife or cake leveler. using a second plate, remove the top of the cake and set aside. flip the bottom half of the cake back into the cake pan. for this part, you can make the cake all fancy and do multiple layers if you want to. it's all about what you want :)

In a medium saucepan cook 5 T flour, 1 c milk, 1/4 tsp salt until thick. when i say thick, i mean kind of like a thin gravy. When it is too thick it doesn't beat up as nicely in the end. Remove from heat and add 1 tsp vanilla. Let cool completely. I usually put it in the refrigerator to cool while I do the next step.

In a medium bowl, cream together 1 c granulated sugar, 1/2 c crisco, 1/2 c margarine and 1/2 tsp salt.

When the "gravy" is cooled completely, add it to the bowl of creamed ingredients and beat for 10 minutes. It should be fluffy and the consistency of twinkie filling.

this recipe makes around 2 cups of fluff. It would be enough to have a 1/2 inch of filling in a 9x13 cake.

spread the cream filling on the bottom cake layer, leave 1/4 inch of space around the outside of the cake. the cream will spread out when the top layer is put back on.

carefully flip the top layer back onto the cake. frost as you normally would. if you are going to do a cake with multiple layers, i would recommend putting the cake in the freezer so the twinkie filling sets up and does not mix with the frosting if it squeezes out of the sides.

Pioneer Woman's Chocolate Sheet Cake

Ingredients
FOR THE CAKE:

2 cups Flour
2 cups Sugar
1/4 teaspoon Salt
4 Tablespoons (heaping) Cocoa
2 sticks Butter
1 cup Boiling Water
1/2 cup Buttermilk
2 whole Beaten Eggs
1 teaspoon Baking Soda
1 teaspoon Vanilla

FOR FROSTING:
1/2 cup Finely Chopped Pecans
1-3/4 stick Butter
4 Tablespoons (heaping) Cocoa
6 Tablespoons Milk
1 teaspoon Vanilla
1 pound (minus 1/2 Cup) Powdered Sugar

Directions
In a mixing bowl, combine flour, sugar, and salt.
In a saucepan, melt butter. Add cocoa. Stir together.
Add boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.
In a measuring cup, pour the buttermilk and add beaten eggs, baking soda, and vanilla. Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes.
While cake is baking, make the icing. Chop pecans finely. Melt butter in a saucepan. Add cocoa, stir to combine, then turn off heat. Add the milk, vanilla, and powdered sugar. Stir together. Add the pecans, stir together, and pour over warm cake.

Cut into squares, eat,

SEVEN LAYER ICE CREAM PIE

Ingredients
    For the Crust
  • 2 cups Oreo cookie crumbs (about 16 cookies)
  • 2 cups mini pretzel twists
  • 8 tablespoons butter, melted
  • For the Filling
  • 1 container (1.5Q) Breyer’s Vanilla Ice Cream (I used the fat-free kind)
  • 1/3 cup peanut butter
  • 6 Oreos, Chopped
  • 1/4 cup Hot Fudge Sauce (Breyer’s Hot Fudge Sauce)
  • 1/4 cup Chocolate Sauce (Breyer’s Chocolate Flavored Sauce)
  • 1/4 cup Caramel Sauce (Breyer’s Caramel Flavored Sauce)
  • 1/4 cup chocolate sprinkles
  • 1/4 cup rainbow sprinkles
Instructions
  1. Remove ice cream from freezer to get soft enough to stir while you make the crust.
  2. Pulse 16 Oreo cookies in a food processor until only fine crumbs remain. Place in a medium bowl. Add pretzels to the food processor and pulse until there are only small pieces, add to Oreo crumbs. Stir in melted butter with a fork. Press into the bottom and up the sides of a 9.5” or 10” pie plate. (If you are using a 9” pie plate, you can use all the crust (it will be thicker) but you won’t be able to fit the entire container of ice cream, so use about 3/4 of the container.) Freeze crust until ready to fill.
  3. Place peanut butter in a large bowl. Heat for 30 seconds in the microwave, stir to smooth it out. Add the container of ice cream that’s been softening on your counter. Add hot fudge sauce and remaining 6 chopped Oreos. Fold all ingredients together. (You don’t want to incorporate the peanut butter and hot fudge totally, just make ribbons throughout the ice cream.)
  4. Pour ice cream into prepared crust and smooth the top. Top with hot fudge, caramel, and both sprinkles. Place in freezer to harden. (Either place in a tupperware container that will hold the pie plate, or once it’s frozen cover it with plastic wrap.)
